We did it!

Hello! Sorry for the major hiatus but whilst I was away we got married! Finally! Yes I had big intentions of sharing our wedding planning up until the wedding but the planning literally took over our lives. I'll of course share lots now that we have all this free time on our hands :)

The wedding was absolutely amazing! It was exactly what we had wished for and more. We couldn't stop smiling at each other all day! It so lovely seeing family & friends all together and everyone was so so happy. We've been in a happy married bubble for two weeks now and we still can't stop talking about it.

We have to wait a few weeks to get our photos back from the photographer but from the pictures I have I'd love to share more details on decorations, invitations, our venue & more! Anything to keep talking about our wedding for a bit longer ; )

Chicken and Aubergine Summer Salad

This week I've teamed up with Sainsburys to help try and inspire the nation to be creative with vegetables. I've made a yummy summer salad which is perfect for mid week dinners as well as when entertaining friends. It's jam packed with seasonal vegetables, full of colour and flavour! I love vegetables but the baby corn in this is my favourite as its so sweet and crunchy.

You will need:

- Mini Chicken breast
- Aubergine
- Courgette
- Red Onion
- Cherry Tomatoes
- Low fat Halloumi 
- Clove of Garlic
- Baby Sweetcorn
- New Potatoes (cooked in the microwave for 8 minutes to give it a head start)
- Salad Leaves
- Dried Oregano
- Olive Oil
- Salt & Pepper
- Balsamic Glaze (optional)


Making this is so easy as you simply chop it all up and roast together in one big roasting tin. I chopped up my veg and tossed it with oregano, salt, pepper and a little olive oil and roasted at 200c for 20 minutes with the chicken breast (turning after 10 minutes). Chop your halloumi into cubes and add to the vegetables, cooking on for an extra 10 minutes until everything has a beautiful char.

Serve on a bed of salad leaves and drizzle with some balsamic vinegar glaze to give it an extra special touch!

I really love this dinner as it is full of summer flavours and reasonably quick and healthy.

A Night Away In Stratford Upon Avon

This past weekend Ian & I had our long awaited engagement photos taken. It's something i've wanted to do for ages, so saw it was a chance to get to know our photographer before our big day in October. We ended up choosing Stratford Upon Avon as our shoot location, staying in a hotel for one night. With its cute cobbled streets, historic buildings and lots of green along the River Avon it seemed like a perfect place.

We hired a little rowing boat, did lots of smiling, kissing and walking hand in hand. It was probably the most public display of affection we've ever had..HA! I really can't wait to see the pictures in a few weeks time.

After we were finished we were desperate for a cold drink so headed to a pub, then onto Pizza Express (my first time there!) for pizza, then back to the hotel for a big glass of wine :)

The next day we had a yummy hotel breakfast, headed out to do a little shopping and then it was time to get back home to reality.

It was so nice just to have a little romantic break for 24 hours...roll on the next one!

Wedding Wednesday - Wedding Cake!

As you know i'm a sucker when it comes to cake. As well as choosing the cake design and i'm excited to do some cake tasting. Flavour wise we haven't made any decisions but we like the idea of a lemon tier, a victoria sandwich tier and then something a little less traditional such as carrot cake (this will be our wild card for sure!)

I love looking on Pinterest at all the beautiful cake designs. Some of the work and dainty detail that goes into them is amazing. They are almost too pretty to eat! Here are some of the designs that are our favourites.

Wedding Wedneday- Bridal Hair

As our wedding draws closer (just under 5 months..Eek!) I thought i'd do a little series sharing ideas that I love and all things wedding. We are in the depths of planning, with so many decisions to make. From flowers and decorations to hair styles and suits, there is so much to think about!

I can't wait for my hair trial, I'm not one of those people who spend ages styling their hair so I can't wait to have it different. These are some beautiful styles that I'm loving...

Garden Inspiration 2016

Now that our house is practically finished we are starting to think about doing up our garden. At the moment it hasn't got much going for it, it's a complete blank canvas. In some ways that makes it so much easier for us to put our stamp on it, but finding inspiration can be difficult. We know we'd like a cottage style garden full of flowers with a nice seating area for BBQs and fairy lights! 

Here are some of my ideas for the garden...

Ahh I can't wait to get the garden sorted so we can start enjoying it! I have bought a few bulbs and planted them out so fingers crossed they will pop up soon and we can enjoy a colourful garden. We just need to lay the new patio and grass and it should look much better.

Our First Easter at Home

Although Easter was a couple of weeks back I thought I'd share a few pictures of our decorations. It was our first Easter in our house so it felt great to decorate with the bits and pieces I had been buying over the years. 

We had family staying with us over the long weekend which was nice. The weather was pretty pants but we managed to fit in a blustery walk. Apart from that we enjoyed a meal out, lots of chocolate and my epic Easter cake. It was so big that the lid didn't fit on my our cake stand! It went down very well and i'm hoping to make it a new Easter tradition.

Inside was a chocolate cake filled with chocolate cream cheese frosting. Outside is a vanilla cream cheese frosting with chocolate buttons, On top is a huge cornflake nest filled with Galaxy golden eggs and mini bunnys. It was sooo good!

Now Easter has come and gone we are left with an abundance of chocolate. Literally soo much chocolate! I wouldn't normally complain but I am trying to be good, the temptation is too much. I think some cream egg brownies will be made soon to share everyone.
