Weekend Escape - Center Parcs 2017


This past weekend we celebrated my father in laws 60th birthday in Center Parcs. We absolutely love it there! It's one of our happy places, somewhere to escape from day to day life for some peace and quiet in the forest. 




We were so lucky with the weather, perfect sunny blue skies with a chill in the air. We bundled up and went for lots of long walks with a pit stop for a drink along the way. On one of our walks we ended up at the Pancake house for lunch. Oh my gosh...it was soo good!! I went for a New York stack with bacon and syrup and Ian had a cheeky milkshake. So amazing!



 
We kept busy and made the most of the swimming pool by going twice a day. The idea of getting into your costume always seems a faff but once you're back out you just cant beat that warm fuzzy feeling. The rest of the weekend was also spent playing Badminton, Adventure golf, going out for dinner and back to the villa for card games.




 It was a fun filled relaxing holiday, we were so sad to leave but we hope to go back soon!

Beating The Winter Blues


Although New Year optimism is still lingering, it’s easy to feel the winter blues in January. From the lack of Christmas cheer to the dreary weather and especially going to & from work in the dark, it can all be a bit depressing. Here are a few things we try to do to conquer the winter blues...

Binge watching a favourite show

We love a good TV series and enjoy binge watching a few episodes in the evenings. We’ve occasionally had a cheeky early night just to snuggle in bed and watch our favourite show. We don’t have the best TV in our room, so Ian is using this as an excuse to buy a new TV. With his birthday coming up, he’s got his eye on the Ultra HD TV Panasonic. We’ll have to wait and see how lucky he is ; )

A Candle lit bath

Sometimes there is nothing better than a hot bubble bath when it’s cold and wet out. I like to light a few candles, find some spa type music and just RELAX. One of my favourite candles at the moment is from The White Company SPA range. The smell really reminds me of our mini moon spa break back in October. If you don’t have a bath then even a candle lit shower is relaxing.

Feel good food

We are trying to eat a bit better after all the indulgence of Christmas, so are trying out some new recipes. The Lean In 15 cook book has been a huge inspiration. The meals are far from diet food, they are hearty and nutritious and definitely have the feel good factor! Have you tried any of the recipes before?


Winter walks

If we are lucky enough to have a dry weekend, we bundle up and head out for a long refreshing walk. I find that I am instantly cheered and refreshed, the chilly air just blows all the cobwebs away. A visit to the pub with an open fire doesn’t go amiss either!


Buy fresh flowers

There is nothing like fresh flowers in your home to brighten up your day and remind you that Spring time is just around the corner. Creams, pinks and fresh greens are my absolute favourite!



It's absolutely freezing outside. I'm so ready for the warmer longer days but will make the most of these cosy nights a little bit longer while they are still around.

Our Christmas - 2016

-Christmas Eve Drinks-


Hello & Happy New Year!

Did you have a lovely Christmas? We had a magical time, especially as it was our first as husband & wife! It is our favourite time of year so we try to take a few extra days off of work to make the most of it. As it’s my birthday on Christmas eve eve (AKA the 23rd) my husband always tries to make some fun plans for us to make it extra special for me.


One of the highlights for me was a trip into London to use our wedding vouchers in Selfridges and best of all see Aladdin in the West End. It’s our favourite Disney film and one we watched when we first started dating so brings back a lot of memories. Seeing all the twinkly Christmas lights along Oxford & Regents street added to the magic of the day.

We spent lots of quality time with family & friends with all the food! You just can’t beat that time between Christmas & New Year when you go on lots of walks, have cosy afternoons on the sofa and each day blurs into one. I really didn’t want it all to end.

We made a gingerbread house (one of our annual traditions) whilst watching The Holiday. It was such a perfect evening 💓


On New Year’s Day we went ice skating which I was slightly apprehensive about. Ian’s been asking me to go for years but I’ve always chickened out. This time round I was brave which I’m so happy about as we had so much fun. I managed to fall over once and was sweating buckets but I will definitely be doing it again.

Our Wedding Pictures

I can't believe the wedding was almost 2 months ago now. Time is seriously flying by! As our wedding photos are now back I thought i'd share a little about our day.

I was surprisingly calm on the day, I really thought i'd be an emotional nervous wreck but I wasn't! I was so teary on the lead up to the wedding so I was so proud of myself for keeping it all contained. 

One thing that I was most worried about was the weather. It absolutely poured down in the morning, I really wanted it to stop as our venue has the most amazing outside space where our drinks reception was to be held. We were so so lucky as the rain literally stopped just before the ceremony and the sun even appeared during our drinks reception.











The venue looked absolutely amazing. It was exactly as we had envisioned, lots of natural colours and textures with ALL THE CANDLES!




The ceremony was beautiful. We were just so happy to finally get married after 10 years of being together. We were surrounded by our family & friends, everyone had such huge smiles on their faces; you could just feel the love in the room : )








Look at that sunshine in the picture! We were so happy that the rain disappeared, so lucky! Our venue was surrounded by the rolling countryside so we managed to get some lovely photos.









The whole day just flew by, we've never known time to go by so quickly. After our photos were taken we had the yummiest sit down meal, fun with the photobooth we hired and lots of dancing till the end of the night.






After our guests had left, we sat in the courtyard with a blanket and hot drink, surrounded by the fairy lights and stars. It was so cosy and romantic! This was the first chance we had to just sit and let the whole day sink in, we couldn’t believe we were finally married! The whole day was truly amazing, we'd love to relive it all again.

Enjoying Autumn




Autumn is 100% my favourite time of year. The colours everywhere in nature are just beautiful, home feels more snug and it's just that little bit closer to Christmas :) I always expected to have terrible 'post-wedding blues' but the Autumn cosiness has seriously helped to beat that. Feeling cosy with my husband *so weird saying that* on chilly evenings with our bellies full of comforting food has felt amazing.

The past month has been filled with LOTS of pumpkins. We found a farm near work that grows 100's of them, all different shapes and sizes. The munchkin ones are just so cute, I could of bought so many of them.




We had a pumpkin carving competition in the family before Halloween. So much fun! We had a quiet Halloween with just one knock at the door...we didn't mind too much though as we scoffed the chocolates to ourselves!





Another thing i've enjoyed is bubble baths! It is so cold out now that a hot bath is heaven. This bubble bar from Lush is a new favourite of mine, it made the bathroom smell like a Spa. I only bought one so will be stocking up with a few next year.

We did it!



Hello! Sorry for the major hiatus but whilst I was away we got married! Finally! Yes I had big intentions of sharing our wedding planning up until the wedding but the planning literally took over our lives. I'll of course share lots now that we have all this free time on our hands :)

The wedding was absolutely amazing! It was exactly what we had wished for and more. We couldn't stop smiling at each other all day! It so lovely seeing family & friends all together and everyone was so so happy. We've been in a happy married bubble for two weeks now and we still can't stop talking about it.

We have to wait a few weeks to get our photos back from the photographer but from the pictures I have I'd love to share more details on decorations, invitations, our venue & more! Anything to keep talking about our wedding for a bit longer ; )

Chicken and Aubergine Summer Salad





This week I've teamed up with Sainsburys to help try and inspire the nation to be creative with vegetables. I've made a yummy summer salad which is perfect for mid week dinners as well as when entertaining friends. It's jam packed with seasonal vegetables, full of colour and flavour! I love vegetables but the baby corn in this is my favourite as its so sweet and crunchy.

You will need:

- Mini Chicken breast
- Aubergine
- Courgette
- Red Onion
- Cherry Tomatoes
- Low fat Halloumi 
- Clove of Garlic
- Baby Sweetcorn
- New Potatoes (cooked in the microwave for 8 minutes to give it a head start)
- Salad Leaves
- Dried Oregano
- Olive Oil
- Salt & Pepper
- Balsamic Glaze (optional)

Method:

Making this is so easy as you simply chop it all up and roast together in one big roasting tin. I chopped up my veg and tossed it with oregano, salt, pepper and a little olive oil and roasted at 200c for 20 minutes with the chicken breast (turning after 10 minutes). Chop your halloumi into cubes and add to the vegetables, cooking on for an extra 10 minutes until everything has a beautiful char.

Serve on a bed of salad leaves and drizzle with some balsamic vinegar glaze to give it an extra special touch!

I really love this dinner as it is full of summer flavours and reasonably quick and healthy.
