I am a foodie kinda person. I love to bake, cook and best of all EAT all kinds of food. Some would say I am not a fussy eater...I rarely turn my nose up at anything and am open to trying new things.
I do have one 'rule' or 'thing' about food. It is that certain foods are eaten at certain times of year...weird right?! I couldn't eat a steaming hot pot roast in the middle of Summer, nor could I eat a light salad on a bleak mid winters night.
It just doesn't seem right.
When I think of Autumn / Winter food I think of COMFORT. There is nothing like coming in from the harsh chill and being welcomed with a tasty casserole or soup...OR a Cinnamon and Banana Muffin!!
Cinnamon is an ingredient that takes you places...for me that place is Christmas. Cinnamon is so heart warming and will leave a lovely lingering smell around your house...pure yumminess!
You will need :
- 225g/8oz self-raising flour, sieved
- 100g/4oz light muscovado sugar
- 2 tsp ground cinnamon
- 2-3 Bananas (depending on your taste)
- 1 rounded teaspoon baking powder
- 125ml/4fl oz milk
- 2 eggs
- 50g/2oz butter, melted
- Muffin Cases
Preheat the oven to 200oC/400oF/Gas 6.
In one bowl add the eggs, sugar and milk. Once the butter has melted and cooled down, slowly mix it in (so it doesn't curdle).
Weigh out the flour, baking powder and cinnamon and sieve it into the bowl, folding the mixture slowly. Finally, peel and mash the bananas until you have a smooth consistency (there may be a few lumps still). Add them to the mixture, folding it again so it's properly mixed in.
Distribute evenly among the muffin cases and bake for about 15 minutes or until a knife comes out clean with put in the middle.
Served best with a LARGE mug of Coffee....
