On the go food - Mini Pizza Puffs...

Sorry it has been a while..life took over for a bit and I hadn't got around to uploading this recipe...I hope you like it : )

At the beginning of the week I have a few aims, goals, or targets so to say. They may be...'Make the order of cushions I have received over the weekend ASAP'..or...'Sort out my wardrobe'. One that seems to re-occur every week is 'Try/Make/Do something NEW'.

So my new thing for this week is 'Mini Pizza Puffs'. I came across this idea a few weeks back and have been thinking about it ever since. I found a really simple recipe online and made some for my lunch today..and they are great!

You will need:
  • 3/4 Cup of Flour
  • 3/4 tsp Baking Powder
  • 1/2 tsp of Dried Oregano (I used Basil...lovely jubbly!!)
  • 3/4 Cup of Milk
  • 1 egg (lightly beaten)
  • 4oz of grated Cheese
  • Sliced Pepperoni or Ham (I used Ham)
  • Pinch of salt
  • Ketchup
  • Muffin Tray or something similar
Method:  

Pre-heat your oven to 375f, 190c or Gas mark 5. Grease the muffin tray (I used one of those spray light ones).  In a bowl, whisk together the flour, baking powder, Salt and herb of your choice. Add the milk and beaten egg. Stir in the grated cheese and meat of your choice. Let it stand for 10 minutes.


Stir again, then divide equally into the muffin tray. Lastly squirt little dots of ketchup onto the top of the batter....So good!!!


 
 Excuse the grease in between each batter...I went a bit crazy with the spray!!!


Cook for 20-25 minutes or until puffed and golden.





You could also use:

  • Bits of Pepper
  • Sweetcorn
  • Onion
  • Pineapple

These mini snacks are really good to keep in mind for all the holidays coming up. You might be having a party and these little o'dourves are a really easy thing to whip up. They are also great for those surprise guests who may pop around randomly!!

  2. ooohh...those look so good!!!! and even better? they look easy. mmmm. ham and pineapple, ground beef and cheddar, chicken and corn and cheese. the possibilities are endless.....

    gonna try these this weekend. i'll let you know how they turn out.
