Our Short Term Bucket List

A few months ago Ian & I had a long chat. We both agreed that this year has absolutely flown by and we felt like we didn't do much with our time. I mean it's nearly been a whole year since we got engaged. Crazy! We always say that time is flying by but this year in particular has just shot by in a blink of an eye. To help us to make the most of our time we decided to make a few bucket lists of things we wanted to do and achieve. We have a long term bucket lists like get married, have kids etc but these are some we can do by the end of the year if we really wanted to!

Alice Springs Chicken copycat recipe!

When it comes to this time of year I start to dream about our past and future holidays to Orlando, Florida. We usually go at the beginning of September so we would usually be making lists and planning our days there by now. Unfortunately we have no plans to go anytime soon, so until then I will continue to dream!

I know a lot of people don't get the whole Disney/Orlando thing, but some are my favourite memories are from that special place in the world!! The foodie in me also secretly dreams of all my yummy food we had there too. One of my favourite dinners was called Alice Springs Chicken from The Outback Steakhouse. I always always always order this dish.

It is so comforting and dreamy. 


Luckily for me there are copy cat recipes so I can make it at home. I thought i'd share the recipe I use, I found this blog post via Pinterest. Gosh that website is so handy! 

We serve ours with garlic mashed potatoes and broccoli. We also miss out the seasoning for the chicken. It's not necessary in my opinion.

Positive Monday #6

Five small but positive things from the weekend:

* It was a long weekend! An extra day spent with my lovebug Ian!

* A few lovely walks to blow the cobwebs away.

* Meeting a distant relative of Ian's who flew over from Vancouver, Canada.

* Getting some running shoes so I can run without injuring myself again!

* Having an early night. Just what I needed!

I hope you had a great weekend too. I can't believe it was the last bank holiday before Christmas. Crazy!

Ten Things About Me Tag!

I was tagged by a lovely reader to answer a few questions about myself. Thank you so much for the tag Stacey! I'll try my best to answer them as well as I can : )

Ten questions about me

1 - What is one film you could watch over and over again?

I think the one film I could watch over and over is Love Actually! It's such a good film, it's so funny and better yet it is Christmassy!

2 - Which book would you recommend to people?

I really love 'Meet Me At The Cupcake Cafe' by Jenny Colgan. I think every girl dreams of owning some sort of shop, whether is is a bakery, a cafe or a haberdashery. I have to read Christmas at the Cupcake cafe!

3 - Which song do you have on repeat?

I really love most of The Killers music. I could sing along to them all day!

4 - If you could only eat one food for the rest of your life, what would it be?

Now that is a hard question! I have a huge sweet tooth so it would have to be some kind of dessert. 

5 - What s one thing you want to learn before you die?

I think i'd like to learn sign language.

6 - Where has been your favourite place to take a holiday?

My favourite holiday is 100% Orlando, Florida. I haven't travelled to many places but Florida has always been the best. There is so much to do there that isn't necessarily theme parks. I love the Villa. I love taking a swim after a hot day in the sun. I love the shopping and how cheap everything is! I love the food! It's just a fantastic holiday.

7 - What quote do you live by?

Think positively, exercise daily, eat healthy, work hard, stay strong, worry less, dance more, love often, be happy.

8 - Which city/country would you most like to visit?

I'd love to see more of America (can you tell that I loved it there?!). I'd love to see New York, Chicago, San Francisco, LA, Las Vegas.

9 - What TV show are you currently glued to?

Ian and I are watching Scrubs from the beginning at the moment. I never used to like it but it's growing on me!

10 - What would you tell your 16 year old self?

That I would soon discover the things that truly made me happy!

A Review! : Ozeri Touch Digital Kitchen Scale

I was recently given the opportunity to review an Ozeri Touch Digital Kitchen Scale. I absolutely love anything kitchen related so jumped at the chance to try out this gadget!

As you know I love to bake so having an accurate scale is really important to me.  These scales have a tare feature which subtracts the container/bowl weight and only measures the ingredients. This is such a great feature, especially if you are making a one bowl cake! It means even less washing up!

The LCD screen is large and bright. These scales also measure all in all sorts of different units of measurements, lb/oz, kg/g, fl.oz and ml . I think this is really useful and will make my baking experience even easier! No more searching for a jug. Just a quick touch and I can measure how much milk I am adding to my chocolate cake.

Something else I love about these scales are how sleek they are. They are so thin and shiny. They barely take up any space on the counter top or if you wanted to store them in a cupboard. They also clean up really well, just a wipe over and they look as good as new.

I'm going to be using these scales to also weigh my makes before posting them out. Knowing how much it weighs helps me to calculate how much P&P is!

Beginning Our Couch To 5k Journey!

A few days back we embarked on the first day of our Couch to 5k journey! I felt so nervous before we started..I'm not sure why. I don't feel like I'm a runner. I also think I have this fear of tripping over and falling flat on my face. Not sure why! We have done two runs so far and I am aching all over and absolutely shattered. I'm hoping this running lark pays off...!

So the first week starts off with a 5 minute warm up of brisk walking, then 60 seconds of jogging then 90 seconds of walking. The jogging and walking alternate for 2o minutes, ending with a 5 minute cool down. I thought it would be relatively easy, especially after doing the shred! I guess not.

On the first run it only took a few minutes of running before I was out of breath and struggling. Ian was running way ahead as if he had been running all his life. Why is it that men make exercise look so easy?? He was barely out of breath. 

The second run was a better. It was still really hard and I felt like giving up but I powered through it. My heart was pounding and I was literally as red as a beetroot but it was worth it.  I've spoken to quite a few bloggers who have already done it and they've said each run gets easier and easier and you will enjoy each one. I'm hoping so! We've decided to do a session of the shred between each run to do a bit of extra weight training. 30 days was a lot but we feel like we could gain a lot more from it by carrying on every now and then.

I really need some proper running trainers so that is on my list as I want to run as safely as I can!

Wishlist Wednesday - The Last Of The Summer Sun

The temperatures are set to go up this weekend so we will probably be having our last BBQ before bonfire night! It doesn't really feel like we've had many this year. The summer flew by so quickly. I've been looking at what the shops have to offer recently and these few things caught my eye. I can feel the slight chill of Autumn in the air so a blanket, candles and some hot food will be a necessity!

Scandinavian Christmas

I was recently sent a gorgeous book to review called 'Scandinavian Christmas' by Trine Hahnemann. If any of you are like me, your minds are already turning to the colder months that lead up the Christmas and all the yummy but naughty food that comes along with it.

Scandinavian Christmas gives you an insight into what Christmas is like for chef and writer Trine. She invites us into her world throughout the month of December and shares her favourite recipes and traditions.

Each Chapter covers different types of baking/cooking you would do throughout the season. Christmas Baking, Gifts from the kitchen, Advent: A whole month of Christmas, Christmas Party, The Christmas Eve Feast and last Christmas Day Smorgasboard. Every other page has at least one photo which is a huge positive for me. I love to see how a dish is meant to turn out!

Most of the recipes seem achievable apart from a few which require a few speciality ingredients. I am yet to make something from this book but the sweeter bakes/dishes sound a lot nicer than the savoury but that might just be me and my sweet tooth!

This book is great to just flick through for inspiration. I've always imagined how lovely Christmas is in that part on the world.

Positive Monday #5

Five small but positive things from the weekend:

* Finishing the Shred on Friday evening. Such a fabulous feeling of achievement !!

* A bacon sandwich made with fresh bread on a Saturday morning.

* Driving a route which I dreaded for the first time. Everything was fine!

* Finding out Ian's car is okay and it's not going to cost an arm and a leg to fix.

* Having a quiet drink in a pub in the countryside. I love it! 

I hope you are enjoying me posting a blog each day. I'm loving it so far! It makes me wonder why I didn't post more often before. So how was your weekend? Did anything small but great happen to you?

Mini Haul

Okay well this is barely a haul, I only bought two different bits over the weeks but I thought I'd share with you all anyway!

I am looking out for new comfy shoes for Autumn and spotted these in the New Look sale for £5..Bargain!! I wore them today with rolled up jeans but they'll look just as good during the colder months too.

We popped into Waitrose yesterday to get some lunch when I spotted these...

I have been pining after these latte style bowls for a long time but I was reluctant to pay the prices that other shops were asking for them. These were on sale at £2.25.

Aren't they lovely? They are perfect for a small bowl of ice cream or to put nibbles out in. I just love the pastel shades too!

Anyway that was the end of my 'haul'. Sorry there wasn't more the show you.

Level 3 COMPLETE! A Review Of The 30 Day Shred

I'm so proud of myself! Today was our 30th and last day of doing the shred. We are finished! I have to admit I am going to miss doing this workout DVD...it has actually been a lot of fun.

Level 3 was tough. It seemed to be more strength and endurance based than the other levels. It involves a lot of planking which I struggled with. I followed Anita who showed an easier version of the move but I still felt challenged overall. I can now jog on the spot and do jumping jacks without feeling like crap! During level 1 I really struggled with the cardio so it is great to see an improvement in that area.

I do not feel like I am shredded but I did not change my diet whatsoever. I completely forgot to weigh myself before I began this little journey but I do have my previous measurements. I have lost a couple of inches all over and look generally more toned so that is great! Like I mentioned in my previous posts, i'm feeling much more energised and good about myself and to me that is the most important thing.

I never thought i'd say this but I actually enjoy this kind of exercise now. I mean I still need encouragement to get off the sofa and do the DVD but once I'm doing it there are no regrets. I think if I stopped working out i'd start to feel a little lost? It just gave me such a boost! If you are considering doing the 30 day shred then I really recommend it. I had 'started' this DVD a few times but only reached day 11. You have to push yourself to do it. Sometimes we did it at 9pm but it was worth it and you will feel so proud once each workout day passes.

So now we are going to move onto another DVD of Jillian's called 6 week Six pack. We Ian is also considering doing Couch to 5k...but I may take a little more convincing before I start running!

Anyway I will continue to do workout updates on here so keep a look out if you are interested! I am now off to bake a naughty cake to celebrate this little achievement! Happy Friday!

Bonfires and S'mores

Last Friday my brother Alex and I went to Ian's house for a mini BBQ / Bonfire party...Everyone else was either away or out so it was just the three of us.

 My brother absolutely loves Ian, I guess he sees him as a brother as he's been in our lives for nearly 7 years now. So as you can imagine the thought of having a bonfire, watching films, playing video games and sleeping over for the night was really exciting for him!

I on the other hand was just excited for good food and to sit around the bonfire. There is something so relaxing about watching a fire flicker and crackle away. We sat and talked until it got dark...and then we began to eat S'mores!

I've tried making typical American S'more using English ingredients. Marshmallows, a knob of Galaxy chocolate and some plain biscuits. For some reason i've found the chocolate didn't melt that well and things got really messy. Not good.

Then someone suggested I used milk Chocolate digestives..leaving out the knob of chocolate. It was amazing! No more fiddling around. Just toast your mallows, squish and eat.

Warning: You will have this all around your face but it will be worth it!

Autumn / Winter Clothes Wishlist

I've had my eye on a few cheeky bits and pieces from the shops recently. I love love love the dress from Tu (Yes! Sainsbury's have some gorgeous clothes). It has these cute little birds all over it. 

I know it is mid-August but I am really excited to dig out my boots and scarves for Autumn. There is something I love about layering up when the colder months creep in. We took Ollie out for a walk last night and it felt so chilly. I loved it!
