Mixed Berry And Streusel Breakfast Muffins
On most Sunday mornings Ian & I go along with my family to watch my brothers cricket practice. It has become a lovely morning out. We bring Ollie along with us and take him for a long walk around the park. He gets to meet lots of new dogs and has even made a friend or two! So sweet. Everyone there seems so lovely..it's just a great atmosphere. They even have a cafe/bar area too so that is a plus!
I've taken to baking something in the morning before we leave so we can have a snack whilst we watch. This morning I made these gorgeous breakfast muffins. The muffin isn't overly sweet but the berries make up for it. The cinnamon and nutmeg streusel topping adds a great crunch and will make your kitchen smell of Christmas and all things nice!
Mixed berry muffins. Adapted from source.
Makes 8 muffins
1 1/2 cups of plain flour
3/4 cup of caster sugar
2 teaspoons of baking powder
1/3 cup of vegetable oil
1/3 cup of milk
1/2 cup of blueberries (fresh or frozen)
1/2 cup of raspberries (fresh or frozen)
For the streusell topping
1/2 cup of white or brown sugar
1/3 cup of plain flour
1/4 cup of cubed butter
1 1/2 teaspoons of cinnamon
1/2 teaspoon of nutmeg
Pre-heat your oven to 200c and place your muffin cases in a muffin baking tray. Mix together your dry ingredients, then add your wet ingredients and mix until combined. Fold in your berries and spoon into your prepared muffin tin. Fill the cases up to between halfway or three quarters full.
For the streusell mix together the ingredients with a fork or your finger tips until it is a crumb like consistency. Spinkle generously over your muffins. Bake for 20 - 25 minutes or until a knife comes out clean.
These are so yummy! I love to eat muffins for breakfast. Although they are a bit naughty, it is the weekend! What do you like to eat for breakfast at the weekend? Let me know in the comments box below : )
