Sundried Tomato, Mozzarella, Black Garlic & Basil Stuffed Chicken Recipe

Have you ever heard of Black Garlic? Neither had I! If you love garlic then you will love it. It's molasses like flavour gives any dish a new depth that fresh garlic just can't. Best of all garlic breath is a thing of the past. 

I adapted this recipe I found on Pinterest and knew the black garlics tangy undertones would be perfect. Contrary to the garlics looks, it tastes delicious.

This is a Mediterranean style dish. I love them as they are always so delicious but have an element of freshness and healthiness to them. I can see this being a firm favourite throughout the warmer months in our house!

To feed 4 people you will need:

4 x Chicken breasts (1 per person)
1 ball of Buffalo Mozzarella (Sliced)
1 jar of Sun dried Tomatoes
3 cloves of Black Garlic (Chopped)
A bunch of fresh Basil leaves (Washed)
Mixed dried Italian herbs
Salt & Pepper


Pre-heat your oven to 200c/Gas mark 6/400F. Carefully butterfly (slice open) your chicken breasts in half and lay them open on a baking dish. Season with salt, pepper and a generous sprinkling of dried Italian herbs. Lay some Mozzarella, Tomatoes, Black Garlic and Basil on each chicken breast and fold over. Lightly season the breasts with some more Italian herbs and add any remaining ingredients on top. 

Bake for 40 minutes or until the chicken breasts are cooked thoroughly. Serve with your choice of greens and new potatoes.

Weekend Trip To Norfolk

Today I wanted to share our mini-break to Norfolk last weekend. Sometimes you just need to get away from it all and go on a little adventure. We took off on Friday and after a long drive arrived at our hotel Barnham Broom. The hotel was perfect. It's in the middle of the countryside (so silent at night time) and only a 20 minute drive to Norwich city centre. As soon as you walk in you can smell the lotions and potions from their Spa...so good!

The weekend was spent doing A LOT of walking. On Saturday we drove to the coast to walk by the seaside and mooch around Sheringham and Holt. Thinking it's now spring time we didn't bring any hats or scarves; typically we needed it as the wind was FREEZING! Popping in and out of the little shops and eating chips by the seaside definitely helped though : )

Back at the hotel we used their free gym facilities to get a good work out in. I thought I wouldn't but I really enjoyed our little half an hour work outs and loved that buzz you get afterwards. Why are gym memberships so pricey?? I guess we should get back into running every other day after work...

On Sunday we went into Norwich to do some shopping. I loved discovering all the different shops down the little lanes. I bought a few Easter decorations from Tiger and my mum a candle from The White Company (I forgot it was mothers day when we booked the hotel - oops!).

Overall we had a lovely relaxing time. The mornings were spent out and about and in the afternoon we came back to relax in the hotel bar or watch a film. Perfection!

Spring Decor

Hello & Happy March!  Spring seems to have sprung around here, daffodil bulbs are shooting up and I even went out this afternoon without a jacket. I feel the cold so that is saying something! 

With warmer lighter days brings spring decor. I've mentioned here before that I love having something to look forward. We should make a big deal and celebrate seasons and occasions such as Easter. I enjoy getting a few decorations out, nothing over the top, just to change up the room and add some new interest. 

I'm also looking forward to getting outside in the garden. My parents have a few large raised beds that i'm longing to fill with vegetable plants and flowers. The previous owners seemed to be keen gardeners so who knows what flowers will pop up over the warmer months. They say to not touch a new garden for the first year to see what each season brings and so far it looks like the Spring bulbs will be promising.
